Thai Fried Sweet Potato Balls
Kai Nok Krata means quail 's eggs. This is to indicate the size of the potato balls. Each potato ball has the size of a quail's egg.In Thailand you find the Sweet Potato Balls (Thai: ขนมไข่นกกระทา) everywhere on the markets. The potato balls are made from the sweet potatoes mixed together with starch and flour.
The flavor is mild sweet and Thais love to have them as all time crispy snack.

Kanom Khai Nok Krata Ingredients:
- 300 grams sweet potatoes
- 150 grams tapioca starch
- 30 grams all-purpose flour, wheat flour, gluten-free flour
- 4 tablespoon sugar
- 1/2 teaspoon salt
- 1 teaspoon backing powder
- 1 liter palm oil for deep frying
Preperation
Thai Fried Sweet Potato Balls
1. Boil or stream the sweet potatoes until cooked through.
2. Cool off completely. Then peel off the skins and mash the patato.
3. Take the sweet potato out in a mixing bowl and add in the tapioca starch, the wheat flour, the baking powder, sugar and salt.
4. Mix all lightly as you can with a wooden spoon and by hand. Do not knead.
5. Roll the mixture into 3/4-inch balls
6. Prepare the frying wok with the palm oil. The palm oil shouldn’t be too hot. use very low heat. Then put the dough balls in the oil. Move the dough balls around a little bit to allow the surface to be evenly browned. The potato balls should be ready when they are golden brown.
7. Take the potato balls out and drain them a bit.
8. Then put them on a paper towel-line plate.
9. Serve immediately
10. Serve Kanom Khai Nok Krata as a snack or as a dessert
